Ingredients:

  • 700 gm broken cashew nuts
  • 500 gm powdered sugar
  • 1.5 tsp green cardamom powder
  • Ghee (for greasing)
  • Gold leaf or silver leaf (optional)

Instructions:

  1. Soak the cashew nuts:
    • Soak 700 gm broken cashew nuts in hot water for 30 minutes.
    • Strain and transfer the cashew nuts to a blender.
    • Make a thick paste by blending the cashew nuts (you can add a little cold water while blending).
  2. Prepare the cashew paste:
    • Put the cashew paste in the vessel in which you are going to cook it.
    • Add 500 gm powdered sugar and mix until the sugar is almost melted.
    • Add 1.5 tsp green cardamom powder and mix well.
  3. Cook the cashew paste:
    • Put the vessel on low flame and keep stirring and cooking until the paste thickens and stops sticking to the vessel.
    • Turn off the flame and continue stirring for a while to cool down the cashew paste.
  4. Shape the Kaju Katli:
    • Take a wooden board or your chakla (the surface you make roti on).
    • Brush it with some ghee.
    • Put a small portion of the cooked cashew paste and knead it a bit.
    • Roll it out into a thin sheet.
    • Brush the sheet with some water.
    • Optionally, place a gold leaf or silver leaf on it.
    • Cut into diamond-shaped pieces.
